Ingredients:
Wet Ingredients
- 2 mashed bananas
- ½ cup nut/seed butter
- 2 flax eggs (2 tbsp flax mixed with 6 tbsp water)
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla
- ⅔ cup non dairy milk
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup cacao powder
- ⅓ cup coconut sugar
- 2 cups oat flour
- ⅓ cup almond (or coconut) flour
- 2 teaspoons Hawaiian Spirulina
- ½ cup chocolate chips
Directions:
- Preheat the oven to 375 degrees Fahrenheit and line a loaf pan with parchment
- Mix together the wet ingredients until mostly smooth, then add in the dry ingredients and mix
- Pour into the loaf pan, top with extra chocolate chips, a sprinkle of coconut sugar, and optional but really good is a sliced banana or banana coins (if you do banana I recommend spreading a little oat/non dairy milk over top of it then a sprinkle of coconut sugar and it caramelizes so nicely!) Bake for 45-60 minutes, until a toothpick can be removed. Mostly - let cool entirely (!!) before slicing, then enjoy! Store in the fridge, it’s really good reheated!
