Double Chocolate Banana Bread

The name of this recipe is all that's needs to be said!  Whether this is a just a treat for the family or for a party dessert, you can't go wrong with this one!

Servings:  5 - 6

Prep Time: 15 minutes 

Ingredients:

Wet Ingredients 

  • 2 mashed bananas
  • ½ cup nut/seed butter
  • 2 flax eggs (2 tbsp flax mixed with 6 tbsp water)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla
  • ⅔ cup non dairy milk
Dry Ingredients:
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup cacao powder
  • ⅓ cup coconut sugar
  • 2 cups oat flour
  • ⅓ cup almond (or coconut) flour
  • 2 teaspoons Hawaiian Spirulina
  • ½ cup chocolate chips

Directions: 

  1. Preheat the oven to 375 degrees Fahrenheit and line a loaf pan with parchment
  2. Mix together the wet ingredients until mostly smooth, then add in the dry ingredients and mix
  3. Pour into the loaf pan, top with extra chocolate chips, a sprinkle of coconut sugar, and optional but really good is a sliced banana or banana coins (if you do banana I recommend spreading a little oat/non dairy milk over top of it then a sprinkle of coconut sugar and it caramelizes so nicely!) Bake for 45-60 minutes, until a toothpick can be removed. Mostly - let cool entirely (!!) before slicing, then enjoy! Store in the fridge, it’s really good reheated!
